Gluten Free, Dairy Free — Contains Eggs

Makes 12 muffins
Ingredients
- 2 cups oat flour*
- 1 heaping cup blackberries
- Scant cup cane sugar
- ½ teaspoon salt
- ½ teaspoon baking soda
- Zest 1 lemon
- ¼ cup avocado or other vegetable oil
- Juice ½ lemon
- 2 eggs— whites and yolks separated
Preparation
- Preheat oven to 375 degrees Fahrenheit. Lightly oil dozen-muffin tin.
- Process 3 cups of rolled oats into flour*. Measure out 2 cups of oat flour.
- Toss blackberries in flour to coat, set aside.
- Combine sugar, salt, and baking soda. Rub zest into mixture.
- Separate egg yolks from egg whites, adding the whites directly into bowl for whipping and the yolks directly into the sugar mixture.
- Add oil, lemon juice, and vanilla to sugar mix. Stir to combine.
- Gently fold the oat flour and blackberries into the sugar mixture, careful not to overmix* or crush blackberries.
- Beat the egg whites to stiff peaks.
- Fold half of the egg whites into oat mixture, moving quickly and ever so gently. Repeat with remaining whites.
- Distribute batter evenly in the muffin tin, each cup should be about half-full.
- Bake for 15 mins, until sides are golden brown and middle is set. A knife or skewer should come out of the center with few to no crumbs.
- Let muffins sit in tin 5 mins. Then, run a knife around the edge and gently pop each muffin out. Let cool on rack.
Tips
*If you don’t have oat flour, it is very easy to make by blitzing up oats in a food processor or blender. Also, you can substitute wheat or whatever flour you have on hand.
*Leave oats out until the end to keep the texture light and crumbly. The muffins should go into the hot oven quickly once the oats are mixed in, to prevent the texture from becoming gloopy like oatmeal.
